This Paleo pizza recipe is very tasty and easy to make. This recipe makes at least 5-6 slices which means you could have it for dinner and have enough to take with you to work for breakfasts or lunches. My recipe consists of a cauliflower crust then a pork crust with toppings. Use any veggie toppings you like, I predominately used aubergine, pepper, onion and olives but mushrooms, spinach or feta would also work well.

Ingredients
Pork Crust
750g Pork mince
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried parsley
Salt & pepper
Handful of fresh basil
2 garlic cloves, sliced
1 large free range egg
3 tablespoons tomato puree/paste
Cauliflower Crust (base)
1 medium cauliflower, chopped into florets
2 large free range eggs
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried parsley
Salt & pepper
3 tablespoons tomato puree/paste
Topping
1 onion, sliced
1 yellow pepper, sliced
1/2 aubergine, diced
Handful of green pitted olives, halved
Sprinkle of cheddar cheese, optional
Method
- Preheat the oven to 180°C / 200°C fan assisted / 350°F
- In a medium-sized mixing bowl add pork mince, dried oregano, dried basil, dried parsley, salt, black pepper, fresh basil, garlic and egg. Using both hands, blend everything together.
- Pour the pork mixture onto a rectangular rimmed baking tray and use your hands to flatten the meat evenly across the tray. Note: The pork will shrink slightly once cooked.
- Bake pork in the oven for 25 minutes.
- In the meantime, make the cauliflower crust. Using a food blender, blend the cauliflower florets to a rice-like texture. Next add the eggs, dried oregano, basil, parsley, salt and pepper and mix together well.
- Place parchment paper on a baking tray and flatten the cauliflower mix. Place in the oven for 15 minutes or until it feels firm.
- Remove the pork from the oven and spread tomato paste around evenly. Add toppings; onion, pepper, aubergine and olives. Return to the oven for a further 12-15 minutes.
- Remove the cauliflower crust from the oven and again spread tomato paste around the crust evenly. Return once more to the oven for a further 5-8 minutes.
- Remove pork and cauliflower from oven. Next, place the pork ‘pizza’ on top of the cauliflower crust and you have assembled your pizza! Add grated cheddar cheese on top (optional), slice and enjoy served hot or cold.
