Ingredients
Butter for cooking
200g lamb’s heart
2 medium courgette, sliced
3 slices of ginger
1 red chilli, de-seeded and finely diced
Juice of 2 limes
Fresh cayenne pepper to taste
Method
- Cut your heart into bite sized cubes. Heat the oil in your wok on a high heat and stir fry the lamb’s heart for 10 minutes or until nearly cooked.
- Remove the lamb’s heart from the wok and set aside.
- Reheat the wok and stir fry the courgette slices with more butter for 3 minutes. Add the ginger, chilli, lime juice and cayenne pepper then return the lamb’s heart cubes to the wok.
- Stir fry for 1-2 minutes to blend all the flavours together.
Serve with a slice of lime.
