Cauliflower tabbouleh is a very quick, easy, healthy and tasty meal on it’s own or as a side dish. Bursting with fresh flavours and can be prepared in only 15 minutes.

Serving 2 People
1 medium cauliflower, florets
Handful fresh flat leaf parsley leaves, chopped small
Handful fresh mint leaves, chopped small
1/2 onion, thinly sliced
100g cherry tomatoes (approx 12-15), halved
1 small cucumber, peeled and chopped
1 tablespoon fresh lemon juice
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
1/2 teaspoon sea salt
Freshly ground black pepper
- Salad: Place the cauliflower florets in a blender and process until the size of small bulgur/rice grains. Transfer to a large bowl and add the parsley, mint, onion, tomatoes, and cucumber.
- Dressing: In a small bowl, whisk together the lemon juice, oil, cumin, salt, and pepper. Drizzle the vinaigrette over the vegetables and toss. If possible, let stand at least 15 minutes to blend the flavours. Serve cold or at room temperature.
